May is one of my favorite months to cook. It’s a delicious mash-up of spring and summer. Vegetables like asparagus, peas, fresh herbs, and radishes abound at farmer’s markets, along with tomatoes and pumpkin. We sometimes have chilly nights, and a cozy bowl of asparagus soup might be just the thing. But Memorial Day weekend kicks off grilling season, ushering in months of cooking, picnics and generally eating outside as often as possible.

This One Pot Lemon Orzo is quickly becoming a reader favorite dinner, and it’s also one of my new favorite dishes. The recipe calls for peas, but you can add any type of green vegetable. For example, I like to use chopped asparagus or spinach. I also often add chickpeas for a good protein boost. If you have children: My son Ollie loves this piece and several readers have shared that it has been a hit with their kids too.

It’s no surprise that this is one of my most saved May dinner recipes, as it’s a great way to use spring vegetables like peas, carrots, green onions, and mushrooms. I think asparagus and turnips would be delicious here too! For an extra protein, feel free to add some grilled tofu or tempeh and serve with rice.

This 30-minute pasta is almost May on your plate! It’s full of late spring and early summer vegetables like asparagus, summer squash, cherry tomatoes, peas, and onions. A little fresh tarragon, basil, and pecorino cheese add an unexpected depth of flavor to this simple recipe.

A delicious and comforting recipe for cool spring nights. Leeks add a rich, onion-like flavor, and the mix of asparagus and peas makes it lightly creamy. If you want to make it creamier, try adding heavy cream at the last minute of cooking.

Clearly, Love & Lemons readers love Caesar salad. Because as soon as I shared this wrap this spring, many of you saved it. Filled with creamy avocado, chickpeas and crunchy greens, this is a great lunch or light dinner for spring and summer. Homemade dressing adds a rich, tangy Caesar flavor. I made this for a Memorial Day cookout and it will be on the barbecue menu all summer long. Serve with homemade chipotle sauce and all the ingredients.

This recipe is literally a salad on top of pizza! I top my crispy, cheesy pizza crust with a flavorful combination of arugula, radicchio, pepperoncini, red onion, and Parmesan cheese. Red wine vinaigrette adds nice acidity to the rich crust and cheese. Fresh and fun, this is my favorite homemade pizza that I want to make all spring and summer.

Falafel wraps filled with fresh herbs, crunchy vegetables, and pickled onions are one of my favorite spring dinners. Judging by how many people saved this recipe in May of this year, we think you’ll feel the same way! Crispy falafel balls baked instead of fried are filled with parsley and cilantro to add a fresh taste. Great for meal prep. Cook a batch over the weekend and then freeze it until you’re ready to use it. Just warm it up a little in the air fryer or oven and eat it!
