If you're not familiar with buckles, they're an old-fashioned dessert that gets its name from the way the dough bends or breaks when the fruit bakes. It's a cross between a cake and a fruit cobbler, and it's delicious. As they bake, the berries release their juices, creating moist, fruity pockets that add a natural sweetness and tartness that complements the cake. I have tried this berry buckle recipe several times but still struggle to keep them moist and delicious and I am so happy with the results! Why This Berry Buckle Recipe Works

Gina @ Skinnytaste.com

I used less butter than most buckles and replaced most of it with applesauce. Buttermilk also helps keep the cake moist, and using fresh, seasonal berries helps keep the cake just sweet enough without adding too much sugar. A crumbly streusel topping is often added to add texture and flavor, but I omitted this to keep it light.

  • A great way to use seasonal fruits
  • A light, low-fat, slightly sweet summer dessert recipe.
  • Weight Watchers Friendly
  • It's delicious if you eat it warm after coming out of the oven.
