Growing carrots is a very simple process.
Peel and chop 6 large carrots and you're almost done!
Place the evenly sliced sticks in a mason jar, add filtered water and starter, and let nature do the rest!
For an extra crunchy texture, add a few more fresh oak leaves if desired.

Another suggestion is to serve the carrot sticks as an appetizer and the homemade dill sauce as a dip.
You can also make your own ranch dressing as a dipping sauce. (In a small bowl, mix together 1:1 ratio of full-fat yogurt and healthy mayonnaise. Add a little garlic powder to taste and you're done!).

Peel the carrots and cut them into sticks about 1/3 inch thick and 5 inches long.
Line the bottom of a pint mason jar with oak leaves and place carrot sticks on top.
Fill the bottle with filtered water to 1 inch below the rim. Add sea salt and whey. *Make sure the carrot sticks are completely submerged in the salt water. If they are too long, remove them from the bottle, trim them slightly, and place them back in the bottle.
Close the lid tightly and gently turn the bottle a few times to mix thoroughly.
Leave the jar on the counter to ferment for two days. During this time, you can turn the jar once or twice a day to facilitate the incubation process.
Refrigerate carrot sticks and enjoy as you like. They make a great snack to add to your lunchbox. Chop them coarsely to add probiotic properties to your salad.
Fermented carrot sticks can be stored in the refrigerator for several months.
