I’ve had so many requests over the past few years to make this corn casserole that I decided to tackle the problem by popular demand. My cousin always makes corn casserole every year for Thanksgiving, so I knew where to find a good starting point. This is a simple corn casserole made with Jiffy corn muffin mix as a base and added canned corn and creamed corn. I added yogurt and egg whites to brighten the original and it was delicious. You might like these scratch-made cornbread muffins or cornbread fillings for your holiday table.

- Corn Muffin Mix – Recipe Basics
- Canned Sweet Yellow Corn and Cream Style Corn – You will need one can of each
- Greek Yogurt – Adds protein and richness.
- Egg Whites – They Hold It All Together
- Whipped Butter – Very little is used here

- Preheat oven to 350F.
- Spray a 9 x 13 baking dish with cooking spray.
- If you put all the ingredients in a large bowl and mix them together with a spoon, they will get fluffy and you will think you did something wrong. Don’t worry. it’s okay.
- Pour into prepared baking dish and bake for 55 to 60 minutes or until golden brown around the edges.
- Let cool for a few minutes before cutting.
