- Reduce heat and stir 2 cups of fresh baby spinach,,, 1 cup of heavy cream,,, ½ cup crushed parmesan cheeseand 2 tablespoons of chopped basil. Cook for about 2 minutes until the spinach wither.

- Ahead: Cook the soup without tortellini and then add it when you re -heat.
