The Easiest 3-Ingredient Almond Butter Cookies

These easy 3-ingredient almond butter cookies (almond butter, brown sugar, eggs) are gluten-free, dairy-free, and so easy to make that you don’t even need a mixer!

I love easy cookie recipes because I’m a lazy baker. That’s why this healthy almond butter cookie recipe is one of my favorites. These cookies are healthier than most and require only 3 ingredients. I’ve been making peanut butter cookies like these for years, and I love the results using almond butter.

A few years ago, I participated in a cookie exchange to raise money for a great non-profit organization, Children’s Cancer Cookies. I exchanged cookies with three bloggers, all of whom asked for cookies made without white flour or white sugar and that could be shipped without refrigeration. These cookies came to mind because they contain no flour and can be stored in a cookie tin for several weeks.

  • Almond Butter: I tested these cookies with Justin’s Vanilla Almond Butter and Maple Almond Butter and they both turned out great. I liked how it enhanced the flavor of the cookies without adding any additional ingredients.
  • sweetener: I tested these cookies several times to figure out the minimum amount of sugar I could use and found 6 tablespoons to be perfect. It also goes well with monk fruit if you want to cut back on added sugars and carbohydrates.

Which is healthier: peanut butter or almond butter?

Both contain about the same amount of calories, fat, carbohydrates, and protein. Almond butter contains more fiber, vitamins, vitamin E, and minerals such as copper and magnesium.

How to Make Almond Butter Cookies

Be sure not to overbake your almond butter cookies. It will be very soft straight out of the oven, but will harden as it cools. See recipe card below for printable instructions.

  1. Get your gear ready: Preheat the oven to 350°F and place one rack in the top third and the other rack in the bottom third. Spray two pans with cooking spray or line them with parchment paper or a silicone mat.
  2. Make cookie dough: In a bowl, combine almond butter, sweetener, and eggs.
  3. Create the cookie shape: Use a tablespoon to spread batter onto prepared baking sheet. If the dough sticks to the spoon, gently lift it off with a small spatula. Press the tines of the fork horizontally and then vertically into the cookie to create a crosshatch pattern.
  4. Bake Almond Cookies Wait 5 minutes and then replace the sheet pan. Bake for another 5 minutes and then remove from the oven. Let cool, then transfer to a wire rack.
These almond butter cookies are made without flour and with only 3 ingredients (almond butter, brown sugar, and eggs)!

Variations and Tips

  • Switch up your nut butter: Try cashew butter, pistachio butter, natural peanut butter, or sun butter if you don’t have nuts. You can also use other almond butter flavors, such as cinnamon or honey.
  • If the almond butter is thinStir well, then measure and add to the dough.
  • Sugar Options: Substitute with granulated sugar, brown sugar, or coconut sugar. Do not use liquid sweetener as it will make the dough too wet.
  • Balance the sweetness. If your almond butter is unsalted, add ¼ teaspoon of kosher salt.
  • Enhance Flavor: If you are not using flavored almond butter, you can add 1 teaspoon vanilla extract and ¼ teaspoon cinnamon or pumpkin pie spice.
  • For those who love chocolate Drizzle melted chocolate on top or make Nutella almond butter cookies.
  • Refrigerate the dough Cook for 10 to 15 minutes if they are too sticky to shape.

  • Preheat the oven to 350°F and place racks in the upper and lower thirds of the oven. Lightly spray two nonstick baking sheets with cooking spray or line them with silicone mats.

  • Bake until golden around the edges, about 10 minutes, switching sheets halfway through baking. Remove from the cookie sheet and allow to cool completely before transferring to a cookie rack (they will soften as they cool).
