Crock Pot Poppy Seed Chicken Recipe

A fan favorite, this dump-and-go version of classic poppy seed chicken will become your new weeknight dinner! While the chicken is cooking, make some soft homemade rolls and a fresh salad.

  1. Add chicken: Spray the bottom of the slow cooker with non-stick cooking spray and place the chicken breasts on the bottom.
  2. Combine: In a medium bowl, mix together the sour cream, cream of chicken soup, and shredded Parmesan cheese.
  3. Pour over chicken: Pour sour cream mixture over chicken in crock pot.
  4. Cook: Cover the crock pot and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours. Once cooked, open the lid and shred the chicken with two forks. Stir in 2 teaspoons of poppy seeds.
  5. Toast some crackers: Melt the butter in a large skillet over medium heat. Once the butter has melted, add 1 crushed Ritz cracker and mix to coat with the butter. Cook the cracker mixture until golden brown, 2 to 3 minutes.
