I grew up eating burritos for breakfast when camping with my family. wow Have you forgotten how good they are? Protein-packed breakfast burritos are truly delicious. You can make it fresh in the morning when the kids get dressed, or you can make the filling the night before and pop it in the microwave the next morning! This recipe is perfect for busy mornings!

How to Make Kid-Friendly Breakfast Burritos

Scramble the eggs first! I like to crack all my eggs into a bowl to prevent the shells from accidentally getting into the pan! Add milk and desired salt and pepper and whisk using a bowl/Pyrex measuring cup. Then pour it into the pan and scramble! Everyone has their own secret to making perfect scrambled eggs. Here is my method: 1. Make sure the pan doesn’t get too hot! 2. Continue folding or moving the egg. 3. Don’t overcook it!

To make the filling, you can save time washing up by discarding the cooked eggs and using the same pan. Add meat, seasoning, and onions to the pan! Mash the meat with a wooden spoon or spatula until brown.

Then add the drained and rinsed black beans and the drained rotel! I didn’t want to add a lot of moisture to the filling, so I drained the rotel… No one likes a soggy burrito!

  • Place a large skillet over medium heat and spray with nonstick cooking spray. In a medium bowl, combine eggs, milk, and salt.

  • Add eggs to a heated pan and scramble them. Once cooked, remove from the pan.

  • Using the same pan, add ground turkey and taco seasoning. Using a wooden spoon, break the meat into small pieces. Add the chopped onion and continue to cook and stir until the meat is cooked through.

  • Drain and rinse the black beans and add to the pan. Drain the tomatoes and add to the pan. Stir and heat.

  • Add finely chopped spinach and boiled eggs. Stir to combine and remove pan from heat.

  • If you warm the tortillas in the microwave, they can be easily rolled and sprinkled with shredded cheese. Add a small amount of filling along the center and roll into a burrito. Serve warm!
