  • green: Sugar snap peas, kiwi slices and cucumber rounds.
  • Blue/Purple: Fresh blueberries.

  • Shamrock Bread: Use a clover-shaped cookie cutter on whole wheat bread and top it with crushed avocado or guacamole.
  • Allspice Shamrock: Slice a green bell pepper crosswise, looking for natural clover-shaped protrusions. Place in the center for a fun dipping “bowl.”

Vegetables and hummus can be prepared up to 24 hours in advance. However, to prevent browning, chop the fruit and spread the avocado on the bread until just before serving.

  • Nut Free/Dairy Free Hummus: This hummus recipe is naturally nut-free. To make it vegan, omit the Parmesan cheese and add 1 teaspoon of nutritional yeast for a savory “umami” flavor.
  • Smoothie variations: If your kids don’t like mangoes, try switching to frozen pineapple or peaches.
  • Vegetable Swap: If sugar snap peas aren’t your thing, try using broccoli florets or celery sticks for the green parts.
