The Creamiest, Eco-Friendly One-Pot Pasta — Green Kitchen Stories

Have you seen ‘Tik Tok Pasta’, which involves roasting feta cheese and cherry tomatoes and then mixing the pasta with mashed sauce? Elsa made it for us yesterday and watching her cook for herself was one of the cutest and proudest parenting moments I’ve ever had. Until we realized that TikTok actually has more influence on our daughters’ cooking skills than ours 🙂 But it was a pretty tasty pasta dish. And the lesson we’ve learned from viral recipes like this is that everyone seems to love a quick and easy pasta recipe.
We also have some quick and delicious pasta recipes for you. This particular dish includes kale, which is not my kids’ favorite thing, so it makes a perfect lunch recipe. It’s super creamy and can be made in under 15 minutes with just a few ingredients and a pasta pot (and a blender). Soften the kale in the pasta water for a minute, then place it in a blender for a creamier pesto. I first saw this method in Jamie Oliver’s 5 Ingredients book. But we added a few extra ingredients to make this more of a meal and serve it in a different way. Toss the pasta with half the sauce, then add the rest to the bottom of the plate. This creates a green base that looks great and makes the whole dish creamier. Use bucatini pasta. It’s similar to spaghetti, but thick and hollow, allowing it to absorb a lot of the sauce. This dish looks amazing and tastes amazing too.
