I tried vegan French toast for the first time a few years ago. (For example…25) At Pick Me Up Café in Chicago. Jack and I went there regularly when we just started dating long distance, and he would come into town to visit. Their vegan French toast is so delicious that it makes me want to make my own at home.
I first shared this vegan French toast recipe in 2013. Over the years of making it on leisurely weekends, I’ve modified it to use increasingly simpler ingredients and have a lighter, softer texture. I’m sharing an updated version today with new recipe photos (my 2013 photos were due for a refresh!). Whether you’re vegan or egg-free, I hope you love this recipe as much as I do.

Vegan French Toast Ingredients
You’ll need 9 simple ingredients to make this easy vegan French toast recipe.
- bread – I like to make this recipe with soft, thick sliced bread. Rather than thin sandwich bread, I try to use sturdy bread such as sourdough, French bread, ciabatta, or vegan brioche. If you must use sandwich bread, handle it carefully after soaking to avoid tearing it. Old bread is ideal as it absorbs the dough like a sponge. In a pinch, fresh bread also works.
- unsweetened almond milk – Makes up the base of the dough. If you don’t have almond milk, you can substitute with another non-dairy milk, such as soy milk, coconut milk, or oat milk.
- cornstarch – The secret ingredient in the vegan French toast recipe! It thickens the dough and helps coat the outside of the bread, giving French toast those delicious, crispy edges.
- baking powder – Helps make vegan French toast light and fluffy when baking.
- nutritional yeast – Adds a savory egg flavor to French toast dough.
- maple syrup – For sweetness. Mix a little into the batter and serve French toast with more on top.
- cinnamon – For a warm depth of flavor.
- coconut oil – For cooking.
- and sea salt – To make every flavor stand out!

How to Make Vegan French Toast
This recipe has three simple steps.

Start by making the dough. In a medium bowl, whisk together cornstarch, nutritional yeast, cinnamon, baking powder, and salt. Add almond milk and maple syrup and whisk until smooth.
Then soak the bread. Transfer the dough to a shallow dish and dip the bread slices into it, one at a time, turning to coat both sides.

Pan-fry the slices until golden brown on both sides; Heat over medium heat for about 2 minutes per side. If the outside of the bread begins to brown too quickly, reduce the heat to medium.
Recipe Tips
Depending on the size of the frying pan or griddle You may need to cook this French toast in batches. In that case, spread the cooked pieces in a single layer on a baking sheet lined with parchment paper. Wrap in foil and place in a 200°F oven to keep warm until ready to serve.

Prevent your screen from going dark
In a medium bowl, mix together cornstarch, nutritional yeast, cinnamon, baking powder, and a pinch of salt. Add almond milk and maple syrup and whisk until smooth. Pour into a shallow baking dish.
