
This salad. Crunchy, creamy, sweet and salty, it’s the perfect way to utilize spring and summer produce. We’ve been loving adding huge, fresh salads to our menu lately. Strawberry Kale Salad It was absolutely perfect.
I call it my “Summer Light” Strawberry Kale Salad. Because it will make you glow from the inside out. Toss wonderful vegetables and fruits with my famous Cilantro Lime Dressing for a great meal prep lunch or side dish for your next BBQ.

Everything you need to make strawberry kale salad
If you grow fresh produce or frequent farmers markets, this salad is the perfect way to use up all that produce. You will need:
- Kale: The basis of this summer salad is, of course, kale! See below for our top tips for enjoying kale in salads.
- strawberry: Juicy strawberries add the perfect sweetness to kale salad.
- avocado: A little creaminess and heart-healthy fats.
- corner: Feel free to use raw, roasted, or roasted corn in your salads! I like to add raw or roasted corn. Learn the best way to grill corn here!
- Feta Cheese: Add a savory salty flavor to every bite.
- Red Onion: Perky red onions tie the whole salad together.
- pistachio: I love the added crunch of roasted salted pistachios!
- For dressing: We’re using our famous Cilantro Lime Dressing which has the perfect amount of heat.


Make your own chopped kale salad
This strawberry kale salad is super easy to customize with ingredients you have in your fridge (or garden). Here are some simple suggestions:
- Select your produce: I think blueberries or sliced peaches would be good instead of strawberries. You can also use chopped broccoli instead of kale.
- Eat a vegan diet: Omit the feta cheese crumbles or use vegan cheese.
- Choose your cheese: On the other hand, this kale salad would be delicious sprinkled with goat cheese or Parmesan cheese.
- Add your favorite crunches: Feel free to use toasted sliced almonds instead of pistachios.


The Best Way to Add Protein
Want to make this strawberry kale salad a little more indulgent? Try adding the following:
- Cook the chopped bacon for a nice, salty flavor.
- Grilled chicken or honey mustard chicken for a true taste of summer.
- The delicious Honey Lemon Garlic Salmon or Grilled Shrimp Marinated in Cilantro Lime Dressing would also be delicious.
- One can of chickpeas, rinsed and drained to keep the salad vegetarian.


Don’t forget to prepare the kale
Kale can be difficult to eat completely raw, so don’t forget these simple tips when preparing kale!
- Please cut it small. Cut them very finely so the bites are not too large. Use a sharp knife, salad chopper, or pulse the kale a few times in a food processor.
- Try a massage. Add the cilantro-lime dressing to the kale in the bowl and mix well. You can also “massage” the dressing with your hands to ensure that all of the kale is well coated.
- Leave it to marinate. you’re right. We recommend letting the trimmed kale sit for at least 15 minutes before adding any other toppings to allow the kale to absorb all the flavor. It makes all the difference.


Make it in advance
Looking to prepare a kale salad this summer? We recommend the following steps:
- Making the Dressing
- Chop the kale
- Cut the corn cob and slice the strawberries and red onion.
Keep everything separate in the refrigerator. When ready to serve, prep the kale and add everything along with the avocado, feta cheese, and pistachios.

This summer kale salad can be stored in an airtight container in the refrigerator for about 1 to 3 days.

A beautiful strawberry kale salad with fresh strawberries, sweet corn, creamy avocado, and a delicious cilantro lime dressing. This fresh chopped kale salad is great on its own and is the perfect base for your favorite protein! Enjoy it as a seasonal side dish or lunch all summer long.
ingredient
- For dressing:
- 1 Batch Cilantro Lime Dressing
- salad:
- 6 cup Finely chopped kale, stems removed
- 1 Stack of halved strawberries in a cup
- 1 Avocado (sliced or diced)
- 1 cup Corn, raw, roasted or roasted (I prefer it raw or roasted off the cob)
- ½ cup dead fetus is broken
- ¼ cup thinly sliced red onion
- ¼ cup Peeled and roasted salted pistachios (or lightly toasted sliced almonds)
- Optional protein add-ons:
- 8 oz. Bacon, optional
- 2 grilled chicken breast
guideline
- First, make the cilantro lime dressing. You can find the recipe here.
Place the chopped kale in a bowl. Remember, you want to chop the kale really finely. Pour the dressing over the kale and use tongs or clean hands to spread the dressing over the kale. You really want to mix it well, so just toss it together for a few minutes to help break down the kale. Let the dressing sit with the kale for at least 15 minutes to allow the kale to mix well with the dressing.
Finally, add the strawberries, avocado, corn, feta crumbles, sliced red onion, and pistachios to the bowl along with the kale. To combine everything, toss gently with tongs. Serves 4. Salad will keep well in the refrigerator for 1 to 3 days.
Recipe Notes
If you want to make this a full meal or make it more hearty, consider adding chicken or salmon. I think my Honey Mustard Chicken or Honey Lemon Garlic Salmon would be really delicious with this salad. I also think bacon adds a nice salty flavor to the salad.
