Mango Bellini – Skinny Taste

Mango Bellini Cocktail

If you’re looking for an easy brunch cocktail that will get you in the festive spirit without much effort, the Mango Bellini is it. A tropical twist on the classic Bellini made with sweet mango puree and chilled prosecco or champagne. I love serving this for Mother’s Day, bridal showers, summer brunches, or any time you want something light, bubbly, and a little special. It’s easy to make a mocktail version with just two ingredients.

What you need

To make easy mango bellini you only need two ingredients.

  • mango puree – Fresh blended ripe mangoes taste great, but using a store-bought puree makes it even easier. In the international aisle, look for options like Goya frozen mango pulp, Alphonso mango puree, or other canned/boxed mango purees. Thaw frozen pulp before use.
  • Chilled Prosecco or Champagne – Prosecco is my preference because it is light, refreshing and affordable, but champagne or dry sparkling wine will also work.

How to Make Mango Bellini

  1. Add 1/4 cup mango puree to each champagne flute.
  2. Pour chilled prosecco or champagne slowly to avoid overflowing with bubbles.
  3. Stir lightly with a spoon to mix. Serve immediately while cold and bubbly.

How to Create More for a Crowd

This recipe can be easily scaled up using the same proportions. 1 part mango puree to 2 parts cold prosecco or champagne.

Best way to serve for a party

Add the mango puree to the pitcher first, then slowly pour in the chilled prosecco just before serving. Stir lightly once and pour into a glass to maintain the foam.

As long as the mango is very ripe and sweet, fresh blended mango tastes best. Otherwise, you can use store-bought puree to make smoother bellini.
