I’ve always loved buying a big box of organic spinach every week to add more greens to my meals. Usually I pack this into all of my smoothies, add it to quiches, and of course I make big salads like this one.
I know a lot of people don’t like fruit salad, but I hope you give this recipe a try! Tony even eats it for lunch along with the sandwiches I make. So you know it’s a hit. This gorgeous peach salad is so refreshing and so delicious. You will fall in love!

Everything you need to make peach spinach salad
This peach salad is one of those salad recipes. almost It may seem too easy to be delicious, but trust me when I say the combo is really tasty and fresh. Here’s what you need for this:
- Fruits and Vegetables: Of course, you also need spinach, peaches, red onion and avocado.
- Mixins: Add crumbled goat cheese for a creamy tang and thinly toasted almonds for a crunch. Yum.
- For dressing: This easy balsamic is made with olive oil, balsamic vinegar, garlic, Dijon mustard, salt, and pepper. If you want to make the dressing sweeter, you can add a little sugar, maple syrup, or honey.


Easy Ingredient Substitutions
What I love about this salad is that it’s completely versatile. So what I mean is that they can be swapped out very easily depending on what’s sold at the grocery store and what you can buy. Here’s what I recommend:
- For spinach: Arugula looks delicious and would add some zest to this salad!
- For peaches: Yes, you can replace the peaches with strawberries or blueberries if you want! Or try Summer Strawberry Spinach Salad with Avocado
- For cheese: I love the tangy flavor of goat cheese, but if you like it more salty, you can also use crumbled feta cheese.
- For almonds: I think roasted pistachios, pine nuts, and even sunflower seeds would be delicious.


Try Creamy Dressing
Balsamic vinaigrette goes perfectly with this peach salad, but if you’re looking for something a little creamier, I recommend the tahini poppy seed dressing!
How to Roast Almonds
You can easily roast your own almonds at home, and you can do so in two ways: on the stovetop or in the oven!
- Cooktop method: Place the sliced almonds in a skillet over medium heat, stirring occasionally, until the almonds are slightly golden brown, 2 to 5 minutes. Turn off the heat, let cool and add to the salad.
- Oven method: Preheat oven to 350 degrees F. Place sliced almonds in a single layer on a baking sheet. Bake until fragrant and golden brown, 6 to 8 minutes, stirring once halfway through baking. Be careful not to burn the nuts!

How to store peach salad
Store this peach and spinach salad in an airtight container in the refrigerator without dressing for up to 4 to 5 days. To prevent the spinach from getting soggy, add the dressing as soon as you are ready to eat the salad. The dressing will keep well in a container in the refrigerator for up to 1 week.

Summer Peach Spinach Salad

One of my favorite summer salads is a fresh peach spinach salad with creamy goat cheese, heart-healthy avocado, and crunchy toasted almonds. Drizzle this lovely peach salad with an easy homemade balsamic vinaigrette for the perfect lunch!
ingredient
- 4-6 cup organic spinach
- 2 large peaches, sliced
- 1 Avocado, finely chopped
- ½ very thinly sliced small red onion
- ½ cup Goat Cheese Crumbles (or Sub Feta)
- ½ cup Sliced Roasted Almonds*
- For dressing:
- 3 tablespoon extra virgin olive oil
- 3 tablespoon balsamic vinegar
- 1 garlic clove, minced
- ½ teaspoon Dijon Mustard
- optional: 1-2 teaspoons sugar, pure maple syrup, or honey to sweeten the dressing.
- Season to taste with freshly ground salt and pepper.
guideline
In a medium bowl, whisk together the balsamic vinaigrette (balsamic vinegar, olive oil, minced garlic, Dijon, salt, and pepper). Add sweetener if you wish. I always prefer!
Place spinach in a large bowl. Drizzle with desired balsamic vinaigrette and toss to combine. Top salad with peach slices, diced avocado, red onion, goat cheese crumbles and toasted almonds. Toss again very gently. Serve immediately. Salad serves 4 people.
