Juicy Grilled Shrimp and Pineapple Skewers with a Sweet and Spicy Soy Glaze make a quick and delicious summer meal for a poolside party or weeknight dinner.

Shrimp and Pineapple Kebab
These shrimp and pineapple kebabs are one of my favorite summer grilling recipes. Chunks of juicy shrimp and sweet pineapple are topped with a simple soy sauce, garlic and a touch of sambal oelek to keep the temperature just right. The combination of sweet, savory, and spicy is always a hit, and since the shrimp cook in just minutes, this easy dinner comes together quickly.

In addition to the ingredients listed below, you will need 8 small skewers or 4 long skewers. If it’s wood, soak it in water for at least 30 minutes to prevent it from burning on the grill. See recipe card below for exact measurements.

- Shrimp and Pineapple Sauce: Sambal Olek (spicy Southeast Asian chili sauce), toasted sesame oil, and low-sodium soy sauce.
- Extra Large Shrimp: Peel and devein the shrimp. Or better yet, buy them ready to eat from the supermarket. If you use frozen shrimp, remember to thaw them in the refrigerator the day before.
- pineapple: Fresh pineapple is best for this recipe. Canned pineapple becomes softer when roasted and doesn’t caramelize.
- red onion It becomes sweeter when roasted.
How to Make Shrimp and Pineapple Kebabs
If you want to prepare a little ahead, you can make the sauce, chop the pineapple and onion, and marinate the skewers the day before. See recipe card below for printable instructions.



- Add shrimp, pineapple, and red onion. With sambal, sesame oil, and soy sauce. Then thread each piece onto a skewer.
- Prepare the grill: Preheat an outdoor grill to medium-high heat and oil the grill. An easy way to do this is to pour avocado oil on a wad of paper towels and rub it on the grid.
- Bake the kebabs: Drizzle with oil and cook for 2 minutes per side.

How do you cook shrimp skewers if you don’t have a grill?
If you don’t have a grill, cook the shrimp and pineapple kabobs in a grill pan or cast iron skillet over medium heat until the shrimp are opaque. You can skip the skewers if you like.
You can cook everything in the oven at 350°F for 10 to 15 minutes or air fry it at 400°F for 5 to 6 minutes.

- Keep shrimp kebabs refrigerated For up to 3 days.
- Reheat: Remove the shrimp and pineapple from the skewers and reheat them in the microwave or frying pan over medium-low heat.

Serving Size: 1 skewer
If using wooden skewers, soak them for at least 30 minutes.
Add sambal, sesame oil, and soy sauce to a mixing bowl and mix well. Place the shrimp, pineapple, and red onion in a bowl, toss together, and toss with the sauce. Thread shrimp, pineapple, and red onion onto metal skewers and place on a foil-lined baking sheet.
Preheat an outdoor grill to medium-high heat and lightly oil the grill.
Lightly spray the kebabs with non-stick cooking spray. Place in an even layer on the preheated grill. Cook the shrimp for 2 minutes per side until they are cooked through and have nice char marks.
Remove the foil from the baking sheet and place the cooked kebabs on a clean baking sheet.
Served with rice, butter lettuce leaves and additional soy sauce.
