Grilled Lemon Pepper Chicken is a quick and easy meal that's delicious as a main course or on a salad for a boost of protein.

Carefully cut the chicken breast lengthwise into thin cutlets.
Using a meat tenderizer, briefly pound each cutlet on a sturdy wooden cutting board.
Place the softened cutlets in a large baking pan and drizzle with olive oil.
Using clean hands, brush each cutlet (on both sides) with olive oil.
Lightly sprinkle seasoning on both sides of the oiled pork cutlet.
Bake at 375°F/190°C for 15-20 minutes or until cooked through.
Store cooled cutlets in a glass container with a tight-fitting lid and refrigerate for up to 4 days.
