Air Fryer Mediterranean Chicken Bites are made with ground chicken, feta cheese, sun-dried tomatoes, and fresh herbs. A delicious twist on kofta packed with Mediterranean flavours.
Kofta is a beloved Middle Eastern dish made from seasoned minced meat that is traditionally skewered or grilled into patties. I used this as inspiration for this recipe. I love using my air fryer to make Mediterranean Chicken Bites. Because it cooks until golden and crispy on the outside while remaining incredibly juicy on the inside. Plus, it’s all done in just 25 minutes!

How to Make Mediterranean Chicken Bites in an Air Fryer
Preheating: Start by preheating the air fryer to 350°F.
mix: In a large bowl, mix minced chicken, feta crumbles, chopped sun-dried tomatoes, chopped red onion, sea salt, Italian seasoning, parsley, and mint. Using a silicone spatula, stir everything together until well combined.
shape: Line the air fryer basket with parchment paper and place the chicken mixture in the basket. Press down to make it flat and even across the surface.
score: Using a spatula, divide the mixture into 3 vertical lines so that they do not touch each other. Then create individual pieces by making horizontal lines about 2 inches apart down each row.
air fry: Sprinkle a little olive oil on the chicken and air fry for 10 to 15 minutes until the outside of the chicken turns golden brown and is completely cooked. Take it out of the air fryer and serve it over rice!

Air Fryer Mediterranean Chicken Bites are incredibly versatile! Here are some of my favorite ways to serve:
- On rice: It is made with white, basmati or cauliflower rice topped with yogurt.
- Pita Wrap: Stuff chicken pieces into a warm pita with cucumbers, tomatoes, pickled onions and tahini sauce.
- On the mezzanine plate: Serve with hummus, tabbouleh, pickles and warm flatbread.
- As a salad topper: Finely chop the pieces and serve in a hearty Mediterranean salad with lemon vinaigrette.
- Roasted Vegetables Include: Serve with roasted bell peppers, zucchini and eggplant for a complete meal.

Preheat air fryer to 350°F.

Place all ingredients in a large bowl. Mix using a silicone spatula.

Line the air fryer basket with parchment paper and fill it with the ground chicken mixture. Press the mixture down to make it flat and even.

Using a spatula, divide the chicken into 3 vertical strips so they are not touching (making columns). Then make small horizontal lines about 2 inches apart all the way to the bottom of the pole.

Drizzle the chicken with olive oil and air fry for 10-15 minutes or until the chicken is golden brown and cooked through. Take it out of the air fryer and serve it over rice.
You can also use ground turkey instead of ground chicken.
Feel free to add ground pork or ground beef to the ground chicken to add extra flavor and fat.
If you want to add spiciness, add red pepper powder.
