Easter dinner is one of my favorite meals. I love the bright, fresh, springy flavors that often accompany the food served on this day.

I change my Easter dinner menu a little bit every year, but there are a few things that are non-negotiable. Carrot cake is one of them. It’s one of my favorite desserts! Also, my family would revolt if these cheesy potatoes didn’t magically appear.
