I love baking this simple apple nut bread and crockpot apple sauce after apple picking. Baking cinnamon and apples in the oven fills my kitchen with the smell of fall. The warm spices, sweetness of fresh apples, and crunch of walnuts create a delicious fall-inspired bread. It’s the perfect cozy breakfast or afternoon snack. Apple Bread Ingredients

- apologize: You can use any apple you like, but Honeycrisp and Gala are best for baking because they are naturally sweeter and don't require as much sugar. You can also use Pink Lady, Golden Delicious, Braeburn, or Granny Smith apples.
- Apple Marinade: The taste is enhanced when the chopped apples are soaked in a mixture of lemon juice, agave, and cinnamon. Granulated sugar can be used instead of agave.

- flour: For more protein and fiber, use white whole wheat flour. All-purpose flour also works.
- Brown sugar: I experimented with using monk fruit brown sugar for sweetness and it was very good.

- oil: The only fat in this bread is two tablespoons of vegetable oil.

- Chopped apples: Combine apples, cinnamon, agave, and lemon juice in a medium bowl.
- prep: Preheat oven to 350°F and spray a 9×5-inch pan with baking spray.
- Dry ingredients: In a medium bowl, whisk together the flour, baking soda, nutmeg, remaining cinnamon, allspice, nutmeg, and salt.
- Wet ingredients: In a large mixing bowl with a hand or stand mixer, beat the oil, egg whites, sugar, applesauce, and vanilla on medium speed until thickened. Scrape down the sides of the bowl.
- Pour the flour mixture Add to the wet ingredients and beat on low speed until combined. Be careful not to overmix the dough.
- Apples and Walnuts: Carefully add the chopped apples and walnuts and mix well.
- baking: Pour the batter into the loaf pan and bake on the center rack for about 55 minutes, or until a poke inserted into the center comes out clean. Let the pan cool for at least 20 minutes before slicing. If you cut the bread before it is cool, it will fall apart.

Store this moist apple nut bread in an airtight container on the counter for up to a day or in the fridge for up to a week. It can also be stored in the freezer for up to 3 months. To freeze, slice the bread, wrap the pieces individually in aluminum foil or plastic wrap, and store in a large zip-top bag. Defrost the pieces in the fridge and heat in the microwave for about 30 seconds.
