  • 5 oz. fresh arugula Or spinach
  • 1 avocado sliced
  • 1 cup strawberry sliced
  • 1-2 blood orange peeled and split
  • 1/4 cup pecan toast if you want
  • 1/4 cup shaved parmesan cheese
  • rind of 1 lemon
  • Wash and dry the arugula. Slice the strawberries and avocado. Peel and slice the blood orange.

  • In a small bowl or jar, combine olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper.

  • Place arugula in a large bowl or plate. Top with strawberries, avocado, blood orange slices, pecans, and shredded Parmesan cheese.
