So it’s no surprise that this beef and broccoli skewers recipe has been a huge hit in our house! This would be a great addition to any dish you're grilling for a summer dinner.   2. Marinate the beef: Place the meat in one of the bowls and toss to coat. Marinate at room temperature for 30 minutes, or cover and refrigerate for up to 8 hours.
  3. Dipping wooden skewers Soak them in water (if using) for at least 20 minutes to prevent them from burning on the grill.
  4. Assemble the skewers: Thread chives, broccoli florets, and beef onto skewers. Repeat with another layer, ending with 1 final green onion. Repeat the same process with the remaining ingredients to make 8 skewers.
  5. Broccoli and Beef Sauce: Apply the seasoning prepared in advance to the skewers and season with salt and pepper.
  6. How to grill beef skewers: Set the grill to high heat and oil the grill. Grill the skewers to desired doneness. For medium rare, sear 3 to 4 minutes on each side and brush with remaining marinade.
  7. How to grill beef skewers: Heat the broiler to high and set the racks about 6 inches apart. Place kebabs on a foil-lined baking sheet. Grill for about 4 minutes on each side until medium rare or longer to desired doneness, then brush with remaining marinade.
