How to Make This Cast Iron Steak Recipe

Below is a brief overview of the process for cooking steak in a cast iron skillet (full instructions are included in the recipe card at the bottom of this post).

  1. Please make the steak seasoning. Mix all seasoning ingredients together in a small bowl.
  2. Pat the steak dry + season it. Remove the steak from the refrigerator and use a paper towel to gently blot any moisture from the steak. Using your hands, massage the seasoning into both sides of each steak.
  3. Let the steak come to room temperature. This step is essential to ensure perfect searing. Aim for 30 to 60 minutes, or until the steak is slightly warm.
  4. Try making garlic herb butter. Combine softened butter, garlic, and thyme in a small bowl.
  5. Heat a frying pan. Once the steaks are at room temperature, heat a cast-iron skillet on the stovetop over high heat for about 5 minutes. This time the frying pan may become very hot, which is important for proper cooking. Add olive oil.
  6. grill a steak (One at a time). Cook for 3 minutes on each side, then flip over and cook for another 3 to 5 minutes. Immediately add half of the butter mixture to the skillet (the butter should melt immediately). Continue cooking until the steaks are cooked to your desired doneness, carefully spooning the melted butter over the steaks.
  7. Wipe out skillet and repeat with second steak.
  8. Let the steak rest. Once the steaks are cooked, let sit for 15 minutes before serving.

Expert tips for a perfect search

Here are some proven tips to ensure perfect crispiness every time:

  • Don’t grill a cold steak! Make sure it has reached room temperature before cooking.
  • Make sure both sides of each steak are well coated with seasoning.
  • Heat skillet for at least 5 minutes until very hot before adding steaks.
  • Use a frying pan that provides enough room for the steak. Do not overcrowd the small skillet.
  • Add the butter immediately after flipping the steak, and continue spooning the melted butter over the steak until the end of cooking.

The one that suits you well

You can’t go wrong with the combination of green vegetables and potatoes! Cast iron steaks go well with:

Sliced steak on a plate.

Store leftover steak in an airtight container in the refrigerator for 3 to 4 days. When ready to enjoy, reheat the skillet over low heat or in the oven at 250°F until warmed through, then quickly bake for a fresh crust. Avoid using the microwave as this can dry out the steak and ruin its tender texture.

FAQ

Should I use butter or oil when cooking steak in cast iron?

I tested this recipe using butter and oil and butter won. You still use olive oil for the initial grilling, but you brush the steak with herb butter. It’s so much more flavorful, and you can’t beat the browned butter bits!

How do I clean a cast iron skillet?

While the skillet is still warm, use a paper towel to carefully wipe away any grease or debris left in the pan. Rinse with hot water and clean using a scouring pad (non-metal) or a soft sponge. If possible, avoid using soap. If you must use soap, use only a little and rinse the pan well to remove any soapy scent. Dry immediately with a clean kitchen towel.

  • Combine steak seasoning ingredients in a glass jar or small bowl and mix well.

  • Remove the steaks from the refrigerator and use paper towels to dry both sides of each steak.

  • Season both sides of the steak, using about 1 tablespoon of steak seasoning per side. Use your hands to massage the seasoning into the steak, making sure it is completely coated.

  • Place the seasoned steak on a plate and let rest at room temperature for 30 minutes to 1 hour before cooking.

  • While the steaks are resting, make the garlic herb butter. In a small bowl, combine butter, thyme, and garlic. Set aside.

  • After the steaks have rested, heat a large cast iron skillet over high heat on the stovetop for about 5 minutes or until very hot.

  • Add 1 tablespoon olive oil to skillet.

  • Once hot (working with 1 steak at a time), add steaks to skillet and sear for 3 minutes. Flip over and bake for another 3-5 minutes. Immediately add half of the butter mixture to the skillet (the butter should melt immediately). Continue cooking until the steaks are cooked to your desired doneness, carefully spooning the melted butter over the steaks.

  • Transfer the steak to a clean plate or cutting board and let rest for 15 minutes before serving.

  • Wipe out the cast iron skillet and repeat steps 7-9 for the second steak.

  • The steaks I used when testing this recipe were about 1 to 1.5 inches thick. If your steak is thin (shorter cooking time) or thicker (longer cooking time), adjust the cooking time accordingly.
  • Use NY strips instead of ribeye steak.
  • Don’t grill a cold steak. Allow sufficient time for the steak to come to room temperature.
  • Steak internal temperature: 135°F – Rare 140°F – medium rare; 150°F – Medium; 165°F – Great.
