How to Make Egg Salad
The egg salad recipe is simple! Boil the eggs, peel them and chop them finely. Dice the red onion and finely chop the fresh herbs.
In a mixing bowl, mix mayonnaise, mustard, lemon juice, salt, and pepper. Add remaining ingredients and mix to combine.
Let cool before serving and season to taste.
For best results, follow these tips:
- Start with a good boiled egg. I make it by placing the eggs in a pot of cold water and bringing the water to a boil over high heat. Once boiling, remove the pot from the heat, cover, and soak the eggs in the hot water for 12 minutes. Then chill in ice water for 14 minutes before peeling. This method yields eggs whose yolks are easy to peel. Check out my Hard Boiled Eggs Recipe for more tips on how to make perfect hard boiled eggs!
- Maintain some texture. When mixing the chopped eggs into the dressing, it’s okay if the egg yolks break up a bit, but don’t mash them too much.
- Everyone join the hub. Fresh chives and dill add flavor to this recipe and give it a very refreshing feel. If you don’t have one of those, use more of the other or add fresh parsley instead.

- Let cool and season to taste. I often find that I need to add a little more salt or a squeeze of lemon after putting this salad in the fridge.
