Upgrade to Chocolate Covered Raspberries
Chocolate covered fruit is a favorite in our house. I will be making this dark chocolate fondue for certain occasions to dip fruit and homemade marshmallows into. Chocolate-covered fruit can be a healthy snack, but sometimes it can be tricky to make it work.
If you’ve ever made your own chocolate-covered raspberries or any other fruit, you’ve probably experienced this. Glorious chocolate that doesn’t look appetizing at all. Chocolate Coated Raspberry Bites taste just the same but so much better.
Chocolate Covered Raspberry Bites
Make it into a cute heart shape that’s perfect for Valentine’s Day. You can actually use silicone molds to create chunky shapes. And instead of simply dipping the raspberries in chocolate, I’m making the raspberry filling first. It is naturally sweetened with maple syrup and thickened with chia seeds.
Research shows that maple syrup is not just sugar, but a unique collection of minerals, antioxidants, and anti-inflammatory compounds. Chia seeds are a great source of fiber, but they also have many other benefits. These include supporting healthy blood pressure and digestion, reducing inflammation and even nurturing the gut, which helps improve symptoms of anxiety and depression.
Then there are juicy raspberries, which are loaded with vitamin C, fiber, and antioxidants. These chocolate-coated raspberry bites are naturally colorful, fun to decorate, and great for your little helpers in the kitchen. My little ones had no problem making these. Plus, it was gone that afternoon!
tips and tricks
You can use other molds, but I chose the heart mold. If you don’t have a good silicone mold, you can make it without one. Freeze small dollops of jam by spooning them onto parchment paper and then dipping them in chocolate for a simple snack.
Start with a small amount of maple syrup, taste and adjust to taste. I prefer the bitter side. This product will keep well in the refrigerator for up to a week. You can also store it in an airtight container in the freezer for up to 1 month. Fair warning: you may need to double the batch if you want leftovers in the freezer!
Here’s how to make delicious, festive, and nutritious chocolate-covered raspberry bites.
Chocolate Covered Raspberry Bites
It tastes like chocolate covered raspberry jam… but better.
optional toppings
- 2 TBSP Freeze-dried strawberries or raspberries (crushed)

In a bowl, mash the raspberries with the maple syrup, chia seeds, and vanilla until thick and jam-like. Allow your teeth to rest for 5 to 10 minutes until it thickens.

Spoon the mixture evenly into 10 large 2-inch silicone heart cavities, filling them almost to the top and smoothing the surfaces.

Freeze for at least 4 hours or overnight until completely set.

Gently melt the dark chocolate and coconut oil until smooth.

Remove the frozen hearts from the mold and dip them in the chocolate until completely coated.

Sprinkle with crushed freeze-dried berries, if desired.

Place on a parchment-lined baking sheet and freeze for 10 to 15 minutes until set.

Eat straight from the freezer or let it soften slightly before eating.
