Homemade Healthy Blueberry Donuts

Last week, our apartment kitchen was magically transformed into an old-fashioned donut-making factory. And I’m not complaining.

Every morning felt like driving to Dunkin Donuts or Krispy Kreme…

Or, it really felt like I had my own donut shop. to meAnd I had to stay in my pajamas the whole time.

I don’t know about you, but if I had the choice between wearing clothes or pajamas, the pajama choice would always win.

It’s not even a competition.

The only difficult part about having a Dunkin Donuts in your kitchen is having to choose:

Should I eat a peanut butter protein donut today?

Or a classic cake donut dripping with maple glaze?

Maybe you want a dozen double chocolate donuts with sprinkles?

Or a big, fat blueberry muffin in donut form.

Yes, today I want soft, toasted blueberry donuts fresh out of the oven.

Healthy Blueberry Donut Ingredients

Blueberry – The recipe calls for half a cup of blueberries. These can be fresh or frozen blueberries. If the berries are frozen, wipe off the ice crystals and thaw before using.

Feel free to swap some of the blueberries for chopped strawberries, raspberries, blackberries, cherries or peaches.

flour – Whole grain spelled flour is my favorite option here because it makes lighter and fluffier donuts than whole wheat flour. Other options that work well include white all-purpose flour or baking gluten-free flour. Oat flour is very tasty, but it also gives you dense, chewy donuts.

Maple Syrup – Use a third cup of pure maple syrup, honey, or agave. We’ve also included keto and sugar-free options in the recipe box below. If using granulated sugar, increase liquid amount as needed.

Vanilla – Just 4 teaspoons of pure vanilla extract perfectly complements the natural sweetness of blueberries. I also like to add a pinch of ground cardamom or 4 teaspoons of ground cinnamon for flavor.

Oil (optional) – Adding oil will give you softer, lighter donuts with a softer crumb. For an oil-free option, use applesauce or mashed banana instead. Some readers have mentioned that substituting sour cream or coconut cream yields good results.

Other Ingredients – You will also need baking powder, salt, white or apple cider vinegar, and water.

Baked Donut Frosting Options

Easy Donut Glaze Recipe: Whisk half a cup of powdered sugar (or sugar-free sweetener) with a tablespoon of water or milk of your choice and a few drops of pure vanilla extract. If you want a thinner icing, slowly stir in more liquid. Dip the donuts into the glaze when it is warm but not hot.

Cream Cheese Frosting: Whip 8 ounces of cream cheese or vegan cream cheese with 4 ounces of butter, 2 cups of powdered sugar or sweetener, and 1 teaspoon of pure vanilla extract. Add more liquid if necessary.

Other ideas: For breakfast, enjoy muffin-shaped donuts plain or topped with powdered sugar or mashed banana. No icing required.

Or, spread each donut with coconut butter, homemade Nutella, peanut or almond butter for a healthy alternative to frosting.

How to Make Blueberry Baked Donuts

  1. Well grease a donut pan or mini donut pan and preheat the oven to 350°F (176°C).
  2. Sift the flour, baking powder, salt, and optionally cardamom or cinnamon into a large mixing bowl. Stir well to mix all dry ingredients evenly.
  3. Now add the water, vinegar, sweetener, oil and pure vanilla extract to a mixing bowl. Stir until evenly mixed.
  4. Lastly, fold in the blueberries carefully to prevent them from breaking up and turning the entire dough purple. Alternatively, you can press berries into each donut just before baking.
  5. Spread donut mixture into prepared baking pan. It should fill six standard-size donut molds about two-thirds full.
  6. Bake on the center rack of the preheated oven for 10 minutes or until the donuts are puffed and soft and fluffy.
  7. After the baked donuts are cooled in the pan, they are fried on a plate with a knife around the sides.
  8. Frost with vanilla or cream cheese frosting or coconut butter. Or, dip each donut in a basic glaze icing made with powdered sugar, vanilla extract, and milk of your choice.
  9. Once cooled, store leftovers loosely covered on the counter overnight, or store them in a covered container in the refrigerator a day later. Donuts should stay good for up to 5 days when refrigerated or up to 3 months when frozen. Thaw frozen donuts before eating.

Protein Blueberry Donuts

Transform your blueberry pastry into a filling, high-protein breakfast by increasing its protein content with just a few changes.

First, replace 4 cups of flour with 4 cups of protein powder.

You can also substitute a third cup of Greek yogurt for the water and use nutrient-dense almond butter instead of the oil.

While the protein powder is brewing, whip up a batch of blueberry protein muffins.

  • 7. After cooling, run a knife around the sides and place on a serving plate.

  • 8. Frost as desired (including the frosting ideas above) and enjoy!

  • 9. Store leftovers loosely covered on the counter overnight or in the refrigerator for up to 5 days. You can also freeze leftover blueberry donuts for up to 3 months.
