Reheating a Frozen Burrito

Reheating a Thawed Burrito. Defrost burritos in the refrigerator overnight. Bake in a 425ºF oven, wrapped in foil, for 20 minutes, flipping halfway through cooking time. Unwrap burritos and bake for 5 more minutes, or grill for 2-3 minutes. To reheat in the air fryer, discard foil, drizzle with oil, and bake at 400ºF for 8-9 minutes, flipping halfway through.

Reheating a Frozen Burrito. Wrap the breakfast burritos in foil and bake in a 425ºF oven for 45 minutes, turning halfway through the cooking time. Unwrap the burritos and bake for another 5 minutes, or grill for 2-3 minutes. (You can also use the microwave, but this is my least favorite option, as it tends to make the burritos soggy and unevenly heated.)

  • Char the tortillas on both sides over a hot griddle or open fire. If you are going to eat them right away, keep them warm in the oven. I think this makes the tortillas more flexible and flavorful.

  • Heat a large nonstick skillet over medium heat. Add the bacon and cook until cooked through, about 4 to 5 minutes. Remove with a slotted spoon and place on a paper towel-lined plate to drain.

  • In a large bowl, whisk together the eggs and salt. Stir in the green onions and bell peppers.

  • Reserve 1 teaspoon of bacon fat, add the eggs, let them settle to the bottom, stir a few times, cook, then set aside.

  • On a clean work surface, place a generous 1/2 cup of the egg mixture on the bottom third of the tortillas. Top each with a slice of bacon and 2 tablespoons of cheese. Roll from the bottom, folding the left and right corners toward the center, and continue to roll into a tight cylinder. Set aside, seam side down, and repeat with the remaining tortillas and fillings.

  • If you eat it right awayHeat a skillet over medium heat. Once hot, drizzle oil into the skillet and place the burritos, seam side down. Cover and cook until the bottom of the burrito is golden brown, about 2 minutes per side. Serve with hot sauce or salsa, if desired.

How to Freeze Burritos for Meal Prep:

  • Lay the foil vertically on your work surface, place the rolled burrito in the center lower third, roll halfway up, fold the sides of the foil over the burrito, and roll up.

  • To prevent freezer burn, store in a freezer-safe plastic bag (bags are reusable).

  • Write your name and date with a Sharpie. (It also helps to write down the cooking time and temperature.)

How to reheat a frozen burrito:

  • To reheat, thaw in the refrigerator overnight. (For best results)

  • Transfer the burritos to the refrigerator the night before. Wrap in foil and bake in a preheated 425F oven for 20 minutes, turning halfway through. Remove foil and bake uncovered for 5 minutes. Optionally, toast them for 2-3 minutes at the end.

  • How to reheat directly from the freezer to the oven: (for best results)

  • Bake in a preheated oven at 425F for 45 minutes, turning halfway through. Remove foil and bake uncovered for 5 minutes. Optionally, toast them by baking for 2-3 minutes at the end. Let stand for 2 minutes before serving.

  • How to reheat directly from the freezer in the microwave (least unpleasant result): Remove burritos from foil, place on a microwave-safe plate, cover with a paper towel, and microwave for 1 minute. Flip over and microwave for 1 to 1.5 minutes more. Let sit for 2 minutes before serving. (Optional, toast in a skillet for 2 minutes at a time until golden brown, or grill for 2 to 3 minutes.)

  • Reheat in the air fryer and thaw in the fridge overnight for crispy results.

  • Transfer burritos to the refrigerator the night before. Unwrap and discard foil, drizzle with a little oil, and air fry in a preheated 400F air fryer for 8-9 minutes, flipping halfway through until the center is heated through.
