The kids and I have been obsessed with cookie testing lately. Brown Butter Chocolate Chunk Cookies with Pistachios are ready. Each bite is sweet, savory and has multiple layers of flavor. A fresh batch doesn’t last long here!

Brown Butter Chocolate Chunk Cookies are thick and chewy, with crispy edges and soft insides. I changed a few ingredients in this dessert to make it a little healthier, but it’s still a treat we enjoy in moderation.

Salty, sweet, crunchy, chewy… You can experience all the flavors and textures in one bite. Here I used coconut sugar instead of brown sugar. Although the flavor is similar, coconut sugar is a less processed option and has a unique caramel tone that really adds to the cookies. I also added collagen powder for a subtle protein boost.

Dark chocolate chunks deliver a bittersweet flavor in every bite and add healthy polyphenol antioxidants, magnesium and micronutrients. Made with sea salt to provide electrolytes and a nice contrast to the sweet cookies. And the pistachio pieces are just a garnish on top. Although it is salty, it has a unique taste.

One of the biggest differences you’ll notice is that they use brown butter instead of regular butter. It provides a rich caramel-like taste. Brown butter is easy to make, but you’ll want to keep a close eye on it while it’s cooking. Cook until brown and fragrant (stir constantly!). If you don’t take it off the stove at this point, the butter will burn and it won’t taste very good!

We recommend using chopped chocolate bars because it is easier to find chocolate bars with at least 70% cocoa content. Chocolate chunks in a bag also work. The taste of good chocolate chunk cookies depends a lot on having good quality chocolate!

When mixing the dough, be careful not to mix in too much flour. This can overwork the gluten proteins and result in tough, hard cookies. If the dough is too soft after mixing, let it cool for 15 to 20 minutes before baking to prevent excessive spreading. To make thicker cookies, let the dough cool for 30 minutes before scooping it out.

Brown Butter Pistachio Chocolate Chunk Cookies

These delicious chocolate chunk cookies get an extra layer of flavor thanks to crunchy pistachios and flavorful brown butter.

  • Melt the butter over medium heat, stirring constantly, until foamy and golden brown (about 4 to 5 minutes). Then turn off the heat and let cool for 20-30 minutes.

  • Preheat oven to 350°F and line a baking sheet with parchment paper.

  • Mix together the cooled brown butter, coconut sugar and maple syrup, then add the eggs and vanilla and beat until smooth.

  • Mix together the flour (all-purpose or 1:1 gluten-free), collagen (if using), baking soda, and salt until combined, then mix in the chopped pistachios and dark chocolate.

  • Place the dough on the prepared baking sheets (about 2 tablespoons each) and let the dough cool for 15 to 20 minutes until soft.

  • Bake for 10 to 13 minutes, until the edges are golden and the center appears slightly undercooked. Sprinkle with sea salt and let cool on a wire rack before serving.

Expiration date and storage

I made a double batch to save some for later. The dough froze well. Scoop into balls, freeze, and bake immediately from frozen, increasing baking time by 1 to 2 minutes.
