This burrata salad recipe is perfect for summer. Easy to make in just 15 minutes and packed with juicy heirloom tomatoes, balsamic-dressed cherry tomatoes, pesto sprinkles, fresh basil and shredded burrata cheese. It’s like an updated version of the Caprese salad, with creamy burrata cheese instead of mozzarella and pesto for a nice basil flavor. I’m a total Caprese fan, but I might like this burrata version better than the classic.
I originally made this burrata salad recipe in late spring, when we got our first tomatoes of the season in Austin. I can’t tell you how many times I’ve made it since then. If you have tomatoes in season, this would be the best side dish. It’s fresh, delicious and easy to put together. Serve with a big summer pasta dish or something coming off the grill. What is Burrata Cheese?
Burrata is a fresh Italian cheese made from cow’s milk or buffalo’s milk. It consists of a mozzarella sack filled with stracciatella or small pieces of cheese mixed with cream. It looks like a ball of fresh mozzarella on the outside, but when you cut it, the milky center oozes out. It adds a delicious richness to this recipe. I love how the creamy center almost decorates the salad as you eat!
Burrata Salad Ingredients
Obviously, this burrata salad recipe starts with fresh burrata. Look for fresh mozzarella in the cheese section of your local grocery store. It comes in a container filled with water to keep the delicate pouch intact.
Here are the extras you’ll need to make this recipe:
- fresh tomatoes – I use a combination of heirloom tomatoes and cherry or grape tomatoes in this salad. I love the contrast between the crunchy, juicy texture of cherry tomatoes and the soft heirloom. Use different colors to make your salad prettier and add depth of flavor.
- balsamic vinegar – Mix with cherry tomatoes to add a sweet and tangy taste. There is no need to use a fancy balsamic reduction or balsamic glaze. Basic vinegar works well here.
- extra virgin olive oil – For the abundance of fruit.
- Basil Pesto – I want a bright, nutty basil scent. Use store-bought or make this pesto recipe from scratch!
- Fresh basil and/or mint – The fresh, delicate flavors make this salad stand out! I usually choose what I have more of in my garden or use a mix. Try both or choose whichever you like!
- and salt and pepper – To make every flavor stand out! I love using flaky sea salt in this salad. It adds a delicate crunch that balances perfectly with the juicy tomatoes.

How to make burrata salad
This tomato burrata salad recipe is super simple to assemble.
1. Start by preparing the tomatoes. Cut the heirloom tomatoes into thick slices.
- tip: I like to use a sawing motion with a serrated knife. This way you can cut up your tomatoes without mashing them or squeezing out their delicious juices!
Cut the cherry tomatoes in half and season with balsamic vinegar, a little olive oil, salt and pepper. Place the tomato slices on a plate and sprinkle the cherry tomatoes on top.
2. Add burrata. Tear the burrata balls into pieces and place them on top of the tomatoes.
3. Add finishing touches. Drizzle a little pesto over the salad, then drizzle with olive oil and season with salt and pepper. Finished with fresh herbs!
4. Season to taste and enjoy.
That’s it! This salad is best enjoyed right after making it. If you want to prepare ahead, you can assemble it up to an hour ahead and store it in the refrigerator. Add fresh basil leaves and/or mint leaves just before serving. take pleasure in!
Recipe Variations
Add peaches! If you have peaches in season, this is my favorite way to make this salad. Substitute one large, ripe peach for one of your heirloom tomatoes. It adds unexpected sweetness and a firmer texture to the salad. I love it!

Burrata Salad

Arrange the heirloom tomatoes on a large plate.

In a medium bowl, toss the cherry tomatoes with the olive oil, balsamic vinegar, and a little salt and pepper. Sprinkle cherry tomatoes on a plate.

Tear the burrata into pieces and arrange them evenly over the tomatoes. Sprinkle the salad with a few light sprinkles of salt and pepper.

Spread pesto generously over salad and drizzle with olive oil. Garnish with basil, season to taste and serve.
