If I had to pick just one cookie that was quick, delicious, and always popular, it would be this one. The fact that you don’t need to chill or roll out the dough makes these my go-to sugar cookie recipe for the holidays.
- prep: Preheat oven to 350°F, then line two baking sheets with parchment paper and set aside. Whisk together all-purpose flour, baking powder, salt, and cornstarch in a large bowl and set aside.
- Cream Sugar & Butter: In another bowl or the bowl of a stand mixer, mix softened unsalted butter and granulated sugar until smooth. Add 1 large egg, vanilla, and almond extract and mix until well combined.
- Combine: Add dry ingredients to sugar mixture and mix until combined. Mix ⅓ cup of the ½ cup sprinkles by hand. Using a cookie scoop, scoop out cookie dough and shape into balls with your hands. Then press the top of each ball into the remaining additional sprinkles.
- baking: Place cookies on cookie sheet, leaving 2 inches between each cookie. Bake for 10-12 minutes. The center should still be gooey when you take it out of the oven. Let cool on the tray. That’s where the sprinkle cookies finish cooking.
