If you’ve made chocolate chip cookie bars, you already know 90% of the trick on exactly how to make this fall-inspired twist! First we make a kind of “flax egg”.   • 1 ⅓ cup MB 1:1 GF mix (or another gluten-free flour blend or all-purpose flour*)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon sea ​​salt
  • 1/2 cup dried cranberries (or dried tart cherries)
  • Preheat oven to 350 degrees F (176 degrees C) and line an 8×8 inch baking pan with parchment paper. Set aside.
  • In a medium mixing bowl, add ground flaxseed, orange juice, orange zest, and vanilla extract (optional). Let the gel sit for 5 minutes (similar to making eggs). Next add the brown sugar and melted vegan butter. Mix well to combine. The mixture should be cohesive.
  • Next, mix in the gluten-free flour mixture, baking powder, and sea salt. Finally, add the dried cranberries and stir until combined.

  • Pour the mixture into a baking pan and bake for 25-28 minutes, until the edges are golden brown and the center is golden. Let cool at room temperature for at least 20 minutes before cutting into bars. The longer it sits, the better it holds its shape!

  • Once completely cooled, store in an airtight container at room temperature for up to 3-4 days or in the freezer for up to 1 month.

*If you are using a DIY gluten-free flour blend or another gluten-free blend, it may be less absorbent, so I recommend adding a little more until the dough resembles what you see in the photo.
