How to Make Parmesan Garlic Chicken with Zucchini

If you have a garden full of pumpkins, try this trick! Crispy Parmesan Chicken is filling enough for dinner. Garlic pumpkins stay fresh and are perfect for summer.

  1. Chicken Bread: Melt 4 tablespoons butter in a shallow dish. In another shallow dish, combine bread crumbs, Parmesan cheese, and flour. Season the chicken breast with salt and pepper. Dip the chicken in butter and then coat in the breadcrumb mix.
  2. To cook chicken: Heat butter and 2 tablespoons olive oil in a large skillet over medium heat. Once hot, add the breaded chicken. Cook for 3 to 4 minutes on each side until the outside is crispy and the chicken is cooked through. Set aside on a plate.
