
There are certain garden crops that produce in abundance every summer. Cucumber is one of them. Even if you don’t grow your own, you can easily find them at stores or farmers markets. These simple cucumber sandwiches are a creamy, fresh way to enjoy cucumbers!
Often served as a finger food at tea parties, cucumber tea sandwiches are a classic. It’s also a practical and delicious choice for snack time, appetizers, or a quick side dish.
Cucumber Cream Cheese Sandwich
Cucumbers have a very high water content, contain fiber and a variety of nutrients. You’ll find vitamins C and K, magnesium, and potassium. It’s a great way to hydrate during the hot summer months. Plus, it adds a refreshing crunch to dishes.
We often use chopped cucumbers in salads and pickles, but I wanted to try using them in cucumber sandwiches as well.
Perhaps the classic British cucumber sandwich originated in British-occupied India in the 1870s. The British created them to cope with the heat. Later they became a staple of afternoon tea time. And Americans added cream sauce to bread and cucumbers.
Microgreens were added for added flavor and nutrition. Plus they add another pop of color and freshness.
Multiple variations (including grain-free)
For years I didn’t eat any gluten or grains, but now I do occasionally. The classic cucumber sandwich uses crustless white bread. This wouldn’t be my first choice for many reasons, but it tastes just as good as sprouted grain bread or sourdough.
If you want to skip the grains, you have a few other options. You can also use butter lettuce leaves as sandwich wraps. Another option is to keep it simple and top the cucumbers with cream cheese sauce.
I chose cream cheese for the filling, but some recipes call for mayonnaise as a filling. If you need a dairy-free option, try mixing a little mayonnaise with herbs and seasonings instead.

Cucumber Sandwich Bites
Creamy and crunchy, this cucumber sandwich is full of classic flavor. Seasonal ingredients and herbs add flavor.
Herb Cream Cheese Spread
- 8 oz. cream cheese (softened)
- ¼ cup crumbled feta cheese (or up to 1/2 cup)
- ¼ cup green onion (thinly sliced)
- 2 TBSP fresh parsley (chopped)
- 1 TBSP fresh dill (chopped)
- 1 teaspoon lemon juice
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
For serving
- 1 cup microgreens
- pepper (freshly broken)
- butter lettuce leaves (Optional, for wrap)
- Sourdough or sprouted grain bread (optional)
Cut the cucumber into thin strips or rounds (about ¼-¼ inch thick).
Place the cucumbers in a bowl. Sprinkle salt and pour in plenty of vinegar. Leave it for 10-15 minutes.
Drain the cucumbers and place them on a clean towel. Please dry well.
In a medium bowl, combine cream cheese, feta cheese, green onions, parsley, dill, lemon juice, garlic powder, onion powder, and salt. Mix until smooth and fully combined.
For cucumber bites (no bread): Place a small amount of cream cheese mixture on cucumber slices. Add microgreens and a pinch of pepper.
Lettuce Wraps: Spread cream cheese on lettuce leaves, add cucumbers and green vegetables, then fold.
Sandwiches: Try spreading cream cheese on sliced sourdough or your favorite bread. Layer the cucumbers and microgreens and then slice them into thin slices.
