This halibut piccata recipe is a great way to prepare fish for those who don't like fish. Flounder has a mild flavor and soft texture that is not overpowering compared to other types of fish. It's easy to prepare, making it a great choice for a weeknight dinner or special occasion. It’s one of my favorite ways to eat fish! Another popular fish dish on my site is Fish Florentine. Produce: 4 Servings
Serving Size: One piece
Season the fish with salt and pepper. Heat oven to 200F.
Beat egg whites in a shallow bowl. Place the breadcrumbs in another plate. Dip each fish fillet into egg white and then into bread crumbs.
Heat a large skillet over medium to medium-low heat. Generously spray one side of the fish with olive oil and place it oil-side down in the pan. Sprinkle the other side of the fish liberally, coating and cooking for 4 to 5 minutes on each side, until the fish is opaque and cooked through.
Place on a plate and set aside in a warm oven until you make the sauce.
In the same pan over medium heat, melt the butter, then add the lemon juice, wine, chicken broth, reserved lemon half, salt, and pepper and bring to a boil.
Boil over high heat until the liquid reduces by half, about 3 to 4 minutes.
Discard half the lemon, add the capers, and spoon the sauce over the fish. Place a lemon slice on each fillet and top with fresh parsley.
