De Boisse says they are simply reviving France’s old tradition of dining together over great local food that goes back deep into medieval history. After the French Revolution, which abolished the monarchy, the Banquet of the Republic was held to announce the coming of a new system, and until recently, every village held an annual banquet, a kind of people’s feast.
