- First, preheat the oven to 350°F or 176°C. Grease the bottom and sides of a round 8-inch springform pan. Set the pan aside.
- Prepare a healthy pie crust. Make the crust by combining the oats, flour, sweetener, and salt in a medium mixing bowl. Stir well, then use a fork or pastry cutter to cut in the softened butter, oil or applesauce.
- Press crust dough firmly into bottom of prepared pan. Then bake on the center rack of the oven for 12 minutes. Remove and let cool.
- Next, prepare the blueberry pie filling by combining the berries, water, maple syrup, salt, cornstarch, and lemon zest (optional) in a bowl and stirring until well combined.
