I was even more surprised when you told me the ingredients!

chocolate – The recipe calls for dark or unsweetened chocolate, which is rich in antioxidants and magnesium. For best results, we recommend purchasing high-quality chocolate baking bars such as Ghirardelli, Baker’s or Guittard.

If you prefer a sweeter mousse, use 70% bittersweet chocolate, or for a sugar-free option with a more intense chocolate flavor, use up to 100% cacao.

apologize – Choose sweet or slightly tart apples. Good choices include Gala, Honeycrisp, Fuji, or Pink Lady apples. Look for fruit that is ripe and not spoiled.

Optional Salt – I like to add a pinch of salt for depth of flavor. This is entirely your choice.

How to Make Healthy Chocolate Mousse

  1. Start by peeling the apples and cutting them into even medium-sized cubes. Discard peel, seeds and core.
  2. Place the chopped fruit in a small saucepan with about 4 cups of water. Cover the pot and bring to a boil over medium heat.
  3. Once boiling, reduce heat to low and continue to steam until soft and tender, about 20 minutes.
  4. Drain all water completely and set apples aside.
  5. Chop the chocolate bar into small pieces. Carefully melt in the microwave or in a double boiler on the stove until smooth.
  6. Combine the apples, a pinch of salt, and melted chocolate sauce in a blender or food processor, or with an immersion blender in a large bowl. The mixture will seem thick and lumpy at first, so continue mixing until completely smooth.
  7. Pour into individual cups or fine glasses. Garnish with fresh berries, mint leaves, whipped cream, or shaved chocolate.
  8. Cover and store leftovers in the refrigerator for up to 5 days. It is not recommended to freeze this dessert for optimal texture.

Tips for the Best Healthy Chocolate Mousse

  • To make a fluffy dessert, use a good quality chocolate bar. Do not attempt to substitute chocolate chips or candy melts. This is because stabilizers and other ingredients are added to them, which can create a rough or grainy texture.
  • Stay away from Red Delicious apples (too soft) or Granny Smith apples (too tart).
  • After boiling the fruit, be sure to drain the water completely. This step prevents the chocolate from hardening.
