Popular regular peanut butter brands like Skippy or Jif are also delicious, but natural peanut butter is a healthier choice. Therefore, it is a good idea to choose options without added sugar whenever possible.
Roasted Peanuts – Look for roasted peanuts with salt at your grocery store. Or, for a Paleo-friendly variation, substitute equal amounts of salted roasted almonds, cashews, or pecans.
date – The healthy cookies are naturally sweetened with dates and no refined sugar. Dried medjool dates give the best results thanks to their soft texture and subtle caramel flavor. Buy dates whole with seeds, or remove the seeds at home and place them in a food processor.

How to Make Healthy Peanut Butter Cookies
- Gather all your ingredients and get out your high-quality food processor.
- In a food processor, add peanut butter, roasted peanuts, dates, salt, and pure vanilla extract. (It is not recommended to use a blender as it will make the dough very sticky.)
- If you are adding chocolate chips or peanut butter chips, you can add them now or at the end. It’s entirely your choice.
- Mix everything together until fine crumbs form. The texture should resemble sticky course flour.
- Place the peanut butter cookie dough into a large Ziploc bag and press into one large cookie dough ball on the inside of the bag. Alternatively, use your hands to form the dough into one large ball.
- Break the dough into smaller pieces. Roll tightly into balls or shape into cookies. For an authentic presentation, I like to create classic peanut butter cookie lines by pressing the cookies with a fork. Or flatten the dough Use cookie cutters to make circles or other shapes.
- Now you are ready to enjoy your cookies. No oven or baking required!
