What’s better than an ice-cold popsicle on a hot day? Nutritious popsicles made with whole foods and healthy herbs! A few months ago I made Mango Golden Milk Popsicles, and recently I tried Hibiscus Lemonade Popsicles.

Rich in vitamin C and antioxidants, it’s perfect for keeping your immune system strong.

Not a very fun fact… Enteroviruses sicken more than 15 million Americans each year, according to the Cleveland Clinic. And these types of viruses are much more common in the summer months. Public swimming pools, running around with neighborhood kids, everyone touching the same baseball. There are many reasons why children need immune system support year-round. And adults too!

During cold and flu season, I sometimes make elderberry ice cream. Really, it’s delicious all year round. But there’s something special and classic about drinking lemonade in the summer. These Hibiscus Lemonade Popsicles have the same flavor but with added fruit flavor and in popsicle form.

Hibiscus Lemonade Popsicle Recipe

  • Boil 3/4 cup of water and steep the hibiscus and rose hips for 10 minutes. Strain and cool to room temperature.

  • Add the remaining water, honey, and lemon juice and stir until well mixed.

  • Pour the lemonade popsicle mixture into popsicle molds and freeze for several hours or overnight until firm.
