Two flavor variations
Both variations use the same high-protein Greek yogurt base batter. The magic is in the toppings!
🫐Triple Berry: Mix colorful frozen strawberries, blueberries, and raspberries and serve with maple syrup. It tastes like berry pancakes in bread form.
🥐 Raspberry Almond Croissant: Top with frozen raspberries and sliced almonds and sprinkle with powdered sugar. It has a nutty, buttery flavor and a slightly luxurious bakery croissant feel.

The basic batter is the same for both flavors. Here’s what you need:
- All purpose flour: AP flour is the base for this dough. It helps create a perfectly crispy and chewy dough when baked. I have not tested this recipe (yet) using gluten-free AP flour or almond flour.
- Baking powder: Because this dough is yeast-free, it requires baking powder as a leavening agent. Don’t skip it!
- Baking Soda: To make perfectly fluffy bread, you also need baking soda.
- Greek yogurt: I tested this recipe with skyr yogurt, Greek yogurt, and blended cottage cheese, all of which were great for adding protein and the right amount of moisture. Painterland Sisters Skyr yogurt is my jam if you haven’t tried it yet.
- egg: Eggs help the bread maintain its shape.
- maple syrup: Since this bread is on the sweeter side, I use a little maple syrup in the dough. It complements the berry flavor very well.
- strawberry: For a triple berry version, use frozen mixed berries (or fresh). Use frozen raspberries for these raspberry almond croissants.
- Sliced Almonds + Powdered Sugar (Raspberry Almond version only): This gives a bakery-style finish to this raspberry almond croissant variation.

My favorite high-protein dough recipe is amazing, incredibly easy to make, and so versatile. That’s why we’ve used it as the basis for numerous high-protein recipes at Fit Foodie Finds. What is the DL ingredient? This high-protein dough uses just a few ingredients and has a rise time of zero. It uses a 1:1 ratio of all-purpose flour and Greek yogurt + a few simple ingredients: baking powder, eggs, and maple syrup.
Greek Yogurt and Blended Cottage Cheese
I tested this recipe with Greek yogurt, Skylar yogurt, and mixed cottage cheese, and it all technically worked. However, I prefer Greek yogurt or Skylar yogurt variations. why? Greek yogurt makes the bread more chewy, and cottage cheese makes the bread more dense and delicious.
Top Tips for High-Protein Bread
Brown sugar or maple syrup work well for this recipe. I’ve tested both and they both work perfectly. Either way, the taste doesn’t change much, so choose your own adventure here.
Any type of berry will work in this recipe. I tested this bread with frozen mixed berries and fresh berries. You can also use different types of berries if you wish.
Don’t overmix the batter. A few lumps are okay! Overmixing may cause the bread to become denser and less fluffy.
