My recent post Sarah’s Favorite Things 2025 generated comments from readers asking why I don’t use chocolate syrup but my husband does.

That’s because I’m very sensitive to caffeine and rarely eat chocolate. (I don’t even drink coffee, although I do make delicious homemade coffee ice cream with decaf espresso.)

Likewise, for those of you with sensitivities or who want a caffeine-free chocolate syrup for your kids (I love mixing it with raw milk!), the recipe below will solve your dilemma.

Chocolate syrup made with roasted carob instead of cocoa (never raw cacao!) tastes almost identical. At least to my taste (especially when you include the optional chocolate extract).

Give it a try! I think you’ll be pleased with how delicious it is and how easy it is to avoid the cocoa part.

If you’re cutting out chocolate syrup, I recommend making the recipe below using 3/4 part cocoa powder and 1/4 part carob powder, then slowly increasing the carob amount to 100% (removing all the cocoa powder) over several batches.

I think if you do it gradually, your family won’t even notice.

  1. Mix all ingredients together in a medium glass bowl until well combined. If you use raw honey instead of date syrup, warm water will help the ingredients mix better. (Not too hot, as this will destroy the raw honey enzymes!)

  2. Pour into a 1-pint glass Mason jar with a tight-fitting lid.

  3. take pleasure in! This easy syrup can be stored in the refrigerator for several months.
