  1. Fold each cheese slice into fourths to create 4 short stacks.
  2. Divide ground turkey into 8 equal balls, then flatten into 1/4-inch-thick patties.
  3. Place a chunk of cheese in the center of 4 patties and place the remaining 4 patties on top. Pinch the edges to seal, then push the sides up to create an even thickness. Season both sides with salt and pepper.
  4. Place patties on greased grill, cover, and cook over medium heat for about 6 minutes per side or until centers are cooked through. Transfer to the bread with toppings and be sure to let it cool before biting into the center to avoid burning your mouth.
