  • In a medium bowl, mix together the oil, vinegar, shallots, mustard, garlic, salt (start with a small amount), and pepper.

  • Add the kale, apples, and parsley (optional) and mix with the dressing. Taste and adjust, adding more salt for more flavor, olive oil for richness, and parsley to balance the herb flavor and vinegar.

  • Best when fresh, but any leftovers can be stored in an airtight container in the refrigerator for 1-2 days. Not suitable for freezing.
