- Frozen Taquitos: My family loves shredded beef taquitos, but any frozen taquito flavor would work!
- Fried beans: Choose your favorite canned bean fritters! Roasted black beans are a great alternative. You can leave out the beans.
- Enchilada Sauce: Use red or green enchilada sauce! I prefer green for chicken taquitos and red for beef.
How to Make Lazy Enchiladas
Dinner couldn’t be easier! Layer, pour, sprinkle and pop in the oven for a quick and delicious meal for the whole family. Make some homemade guacamole and Mexican rice to pair with a meal.
- Spread the refried beans: Preheat oven to 400°F, then spray a 9×13 baking dish with nonstick cooking spray. Spread the refried beans evenly into the prepared baking dish.
- Add Taquitos: Arrange the taquitos in a single layer over the bean layer.
- sauce: Pour the enchilada sauce over the taquitos, making sure to cover them completely.
- Grilled and melted cheese: Put it in the oven and bake for 15 minutes, then take it out and top it with cheese. Return the pan to the oven and bake for 5 more minutes, or until the cheese is melted. Serve lazy enchiladas with desired toppings.
