Our cooking clubs are a fun way to celebrate the Love & Lemons community of readers. The concept is very simple. We select a recipe each month. You make it, and leave a comment on the recipe’s blog post. At the end of the month, one person will be randomly selected to receive a prize.
I love the sense of community that comes from so many people cooking one recipe each month. Today we start the June challenge with a cowboy caviar recipe. We hope you too will join in on the fun. Here’s how it works:

- We select one seasonal recipe each month. Sign up for my email list and you’ll know as soon as I share a recipe each month.
- Try making that recipe for a month.
- Please leave a comment on the challenge recipe blog post by the end of the month. This time the deadline is June 30th!
- If you would like to be entered for a bonus, please send a photo of your creation to Cookingclub@loveandlemons.com.
- For another bonus entry, post a photo and tag us on Instagram. @loveandlemons and #Love & Lemon Cooking Club.

Summer cooking season is here! So this month, we’re celebrating with a delicious, culinary-worthy cowboy caviar recipe. Cowboy caviar, in case you’re unfamiliar, is a black-eyed pea dip, kind of like a bulky pico de gallo or fresh corn salsa. It’s also great as a pre-made lunch/picnic salad! This is one of those recipes that looks really delicious. better Place in the refrigerator for a few hours or days.
My version features a flavorful mix of creamy black beans and black-eyed peas, juicy tomatoes, crunchy bell peppers, savory red onions, cilantro, avocado and plenty of corn. A bright, cumin-flavored dressing ties everything together.
Some useful notes:
- This recipe is vegan and gluten-free.
- If you make it in advance, add the avocado until just before serving to keep it fresh and green.
- Fresh or frozen corn is fair game. If used raw, it can be boiled, roasted, or thrown away raw.

Last month’s recipe
Last month, we made sesame soba for a fresh spring lunch. I’m always trying different variations on this recipe (this month I added cucumber and chili crunch!), so it’s fun to see how you change it up. Here are a few variations you’ll definitely want to try.
- Lori I replaced the snap peas with fresh green beans.
- seaweed We added grilled edamame for a crunchy texture.
- Amanda Kimchi was placed on top of the noodles.
- penny I used strawberries instead of radishes. What a creative twist!
And one item that’s too cute not to share…
