When it comes to Christmas treats, it’s important to have a few healthy recipes you can make and share, especially with young children at home.

This year I tried making candied pecans using sweetener, cinnamon, egg whites, and a little sea salt.

It’s pretty easy to make, and your whole house smells delicious while you’re at it!

To bring out the nutty, buttery flavor and maximize digestibility, I used raw pecans soaked overnight in salt water. They were then dried in a warm oven and folded in with whipped egg whites, maple syrup (for the GAPS diet version, use date syrup), cinnamon, and a pinch of sea salt.

Pecans are lightly toasted in an egg white/maple syrup/cinnamon coating in a 300°F/150°C oven for 30 minutes (raw egg whites are not recommended, so higher temperatures are used).

guideline

  1. Soak raw pecan halves in a large glass bowl with filtered water and 2 teaspoons sea salt overnight.

  2. Drain the brine and place in a warm oven to dry the pecans on a cookie sheet. This will take about 6 hours at 150°F/65°C (turn several times while drying to speed up the process).

  3. In a large bowl, whisk the egg whites and a pinch of sea salt until stiff. Slowly mix in the maple syrup and cinnamon until combined (do not overmix).

  4. Fold in soaked or dried pecans until evenly coated.

  5. Place the coated pecans in a preheated 300°F/150°C oven on two large greased stainless steel cookie sheets and allow the egg white coating to dry completely for 30 minutes.

  6. Remove pan from oven and let cool on counter.

  7. Using a spatula, gently remove the candied pecans from the cookie sheet and place them in a container with a tight-fitting lid. Store refrigerated for 2-3 weeks.
