  • 1/3 cup Old Fashioned Rolled Oatmeal (Check if gluten free if needed)
  • 1/4 cup Tahini (Creamy and moisturizing // Find our favorite brands here)
  • 1/4 cup Pumpkin seeds (also called nuggets)
  • 2 A large spoon Hemp seeds (Includes additional cost for rolling if desired)
  • 1/2 teaspoon Vanilla extract*
  • 1/8 teaspoon sea ​​salt

Chocolate topping optional

  • 2-3 A large spoon Semi-sweet chocolate chips or chunks (excluding dairy products as required)
  • 1 teaspoon Tahini
  • Crushed sea salt
  • Place the pitted dates in a food processor and process until finely chopped and the dates form “date balls” (about 1 minute). Break the “date balls” into smaller pieces, then add the remaining ingredients: oats, tahini, pumpkin seeds, hemp seeds, vanilla, and sea salt. Process until well combined, scraping down the sides as needed. The mixture should be slightly loose and “clumpy,” but not so wet that it sticks to your fingers. If it’s too wet, add more oats, 1 tablespoon at a time. If it’s too dry, add a little more tahini.
  • Chocolate topping (optional): Place chocolate chips and tahini in a small glass or metal bowl. Carefully place bowl over a pot of simmering water. Heat, stirring occasionally with a spatula or spoon, until melted and lump-free (about 5 minutes). You can also melt chocolate and tahini in a heatproof bowl in the microwave for 15 seconds at a time, until melted.

  • Keep a small plate or dish nearby, and place the hemp seeds in a small mixing bowl if you like. Then scoop out a tablespoon, shape it into a ball, and drop it into the hemp seeds if you like. We sprinkled some chocolate and sea salt on it and rolled it in the hemp seeds (both toppings are optional).

  • Place the finished bites on a plate or platter and place in the refrigerator to set (at least 30 minutes for best texture). Enjoy! Leftover bites can be stored in an airtight container in the refrigerator for 5-7 days or in the freezer for up to 1 month.

*Even without nuts, it's delicious if you add almond extract!
