main ingredients
Nutella – Use store-bought or homemade chocolate hazelnut spread. I love making my own vegan Nutella. This is because it is easy to make, requires fewer ingredients, less sugar, and is cheaper than bottled Nutella.
Rice Krispie Cereal – This can be crispy rice cereal or any other small shaped cereal, including classic Kellogg’s Rice Krispies, Nature’s Path Organic Gluten-Free Krispy Rice Cereal, or your favorite keto cereal.
Cocoa Powder – The recipe calls for 4 cups of unsweetened cocoa powder or chocolate protein powder for a high-protein version.
Sweetener – The sticky sweetener holds the bars together. Try honey, agave, pure maple syrup, or sugar-free alternatives.
Vanilla – Pure vanilla extract adds chocolate and hazelnut flavors.
salt – Salt is not necessary for texture or structure, but it makes a big difference in taste. It’s better not to throw it away.
Chocolate chips (optional) – If you’re a chocoholic who believes there’s no such thing as too much chocolate, dip each bar in melted chocolate chips. You won’t regret it.
How to Make Nutella Crispy Snacks
- Line the bottom of an 8-inch square baking pan with wax or parchment paper. Or, for thicker crispy squares, use a smaller pan. Set this pan aside.
- In a large mixing bowl, combine the crunchy rice cereal, cocoa powder or protein powder, and salt. Then stir in the chocolate hazelnut spread, agave or honey (or other liquid sweetener), and pure vanilla extract until well combined. Coat all the crisps.
- Transfer the mixture to the prepared pan and press down very firmly using a second piece of parchment paper. (Please refer to the recipe video for the visual.) Be sure to click!
- Refrigerate until cold or freeze.
- Meanwhile, make the optional chocolate topping by melting the chocolate chips in the microwave or using the double boiler method on the stovetop. If you want a smoother consistency, stir 1 teaspoon of coconut oil into the melted chocolate sauce.
- Pour the chocolate over the Nutella bar and spread evenly with a spatula or spoon. (If you prefer, you can also slice the bottom of each chocolate hazelnut bar and dip them individually in melted chocolate.)
- Refrigerate the pan until the sauce is no longer wet. Slice into bars or squares and serve.
- Store leftovers, covered, on a cool, dry counter for up to 2 days. Alternatively, refrigerate in a covered container for up to one month. Or, freeze it in an airtight container for up to 3 months. It’s so delicious straight out of the freezer!
Katie’s Favorite Recipe Variations
