Orange, Jujube, Avocado Salad + Big Love April — Green Kitchen Stories

Hello, I hope everything is going well. We’ve been out to our country house in the Stockholm archipelago for our Easter holidays, but I wanted to post this recipe before citrus season is completely over. We’ll go into more detail about the salad below, but first we wanted to share some of our favorites, projects we’ve been involved in, and links to new books we’re excited about.

– When COVID-19 hit Denmark, restaurant Noma had to close temporarily, but the Noma crew opened the outdoor burger restaurant Popl instead, and their veggie burgers are made with fermented quinoa and look amazing. I definitely want to visit!
– All recipes from Hetty McKinnon’s new book To Asia with love It looks really good. Count me in on all your simple noodle recipes!
– Luise and I participated in the second episode. Coming Clean Project Podcast We spoke with Oliver Amdrup-Chamby from Puori and Jackie Bowen from the Clean Label Project about their transition to a plant-based diet and learned a lot about toxins in food. Find it in your podcast player.
– Iconic Chef David Chang cooks salmon in the microwave The comments section goes bananas. It’s fun to read.
– I highly recommend subscribing to Rachel Karten for anyone interested in working with social media. Newsletter “Link in Bio”. She was previously the head of social media for Bon Appétit Magazine and her interview was great! She also lists social media job openings.
– Luise was interviewed (in Danish) by To The Moon Honey about life as a parent, starting midwifery school and Puori supplements.
– Heidi Swanson is one of the first food blogs we read, and all of her books have a distinctly Californian vibe. We ordered her new book Super Natural Simple and are so excited for it to arrive.
– Interesting news! We’re working on a whole new version of the vegetable tattoo with illustrator Penelope Dullaghan, and the sketches look the best so far! It is scheduled to be released this summer.
– The last book I would like to recommend is Julia Turshen’s new book. Simply Julia. It’s smart, creative, simple and has a very balanced view of health.

Move on to this salad. I made it as a lunch therapy dish on Instagram the other day and it was simple yet so pretty. We’ve been living off citrus this winter, not only as snacks but also in our lunch and dinner salads. If you haven’t tried a citrus salad yet, it tastes really good with bitter greens. Grilled Feta Cheese Or – as in this recipe – soak up any leftover juices with olive oil, creamy avocado, crunchy hazelnuts, sweet dates and bread. Check out the link and have a nice weekend!
