I usually make bacon/pea dishes with risotto, but this week I decided to try it with orzo and it was so delicious! You can make a simple dinner in just one pot. How to Make Orzo with Bacon

  1. Place the chopped bacon in a large, heavy-bottomed saucepan or Dutch oven. Cook bacon over medium heat for 6 to 8 minutes or until crispy.
  2. Add the leeks and sauté until tender, 3 to 4 minutes. Add the peas and stir-fry for another minute.
  3. Stir in orzo and chicken broth and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes, stirring every few minutes. Scrape the bottom of the pot to prevent the orzo from sticking.
  4. Remove from the heat, stir in the spinach, cover and let sit for a few minutes or until the spinach wilts. Top with Parmesan cheese, lemon zest, and pepper and serve with lemon slices on the side.
