
This recipe took me a few tests to get right, but once I nailed it, it quickly became a staple in my house!
We tried a variety of coating options during testing, but ultimately liked bran flakes best. They add flavor to chicken and provide a fiber boost to oven fried chicken.
Use a mixture of mayonnaise and mustard to ensure the coating sticks well. The regular egg and milk mixture is much thinner, but the mayonnaise mixture allows for a thick coating of crumbs. This helps mimic the crunchy texture of fried chicken.
Another key to getting chicken crispy is to place a wire cooling rack on top of a foil-lined baking sheet. This allows hot air to circulate under the chicken, ensuring it cooks evenly and prevents chicken juices from making the coating soggy.
